A House Built on Conviction
Vellor began with a single, stubborn belief: that caviar produced with genuine care for the fish, the water, and the planet could also stand among the finest in the world.
Provenance
Everything begins in the water. The quality of what we produce is inseparable from the quality of the environments in which our fish are raised. We source exclusively from aquaculture facilities operating in the pristine freshwater systems of France, Italy, and Bulgaria — each independently certified to rigorous environmental standards.
Before any facility becomes a Vellor partner, it undergoes a two-year evaluation process. We visit. We taste. We audit. We return. Only when we are satisfied does a partnership begin.
The Founding
Our founding team spent four years working alongside aquaculture specialists across Europe before curating the small circle of partners whose standards match our own.
We were not former luxury retailers seeking to enter a prestige category. We were people who became genuinely, irreversibly fascinated by caviar — by its complexity, its history, and its almost paradoxical fragility. The more we learned, the more we understood that the category deserved better than it was receiving.
Vellor exists to correct that.
